Ingredients (feel free to adjust as you like):
- Cauliflower
- Broccoli
- Salt
- Pepper
- Garlic powder
- Olive oil
- Pumpkin seeds
- Tahini
- Dijon mustard
- Maple syrup
- One lemon
- Quinoa
- Arugula
Instructions:
- Roast the cauliflower and broccoli at 400 degrees for 25-30 minutes, seasoned with olive oil, salt, pepper, and garlic powder.
- On a plate, combine arugula, the roasted veggies, and quinoa.
- Sprinkle with extra salt and pepper. For the dressing, mix the juice of one lemon, 3-4 tablespoons of tahini, a dash of maple syrup, salt, pepper, and 1-2 teaspoons of Dijon mustard in a glass jar or container and shake well.
Drizzle the dressing over your salad, sprinkle with pumpkin seeds, and enjoy!
