Ingredients:
- 1 cup of almonds
- 3 cups of shredded coconut
- 3.5 cups of dates
Instructions:
- In a high-speed blender or food processor, blend together the almonds, 1 cup of shredded coconut, and dates. Pulse until well mixed, making sure to scrape down the sides regularly. If the mixture is too crumbly, add liquid (water or milk) one tablespoon at a time until the batter reaches a thick and smooth consistency.
- Shape the Energy Balls: Transfer the dough to a mixing bowl. On a large plate, place the remaining 2 cups of shredded coconut. Using your hands, roll the dough into 24 small balls, coating each one thoroughly in coconut.
Chill and Serve: Arrange the energy balls on a plate and refrigerate for at least one hour, or until they are firm.
