What's in the Mix?

Get your ingredients ready: 1 mashed banana, ½ cup tigernut flour, ¼ cup tapioca starch or arrowroot, 1 tbsp water (plus extra if needed), 1 tsp of vanilla extract, 1 tsp baking powder, 1 tsp of cinnamon, ¼ cup of melted coconut oil. 

Let's Get Baking!

Preheat your oven to 390F or 200C.  Mash up those bananas and mix them with all the ingredients. Add 1 tbsp of water to the mix. The batter should be thick, almost like dough, but still mixable with a fork. If it's too dry, add another ½ tbsp of water.

Fill your muffin molds with a spoonful of the batter and pop them in the oven for about 25-30 minutes. While you wait, the tantalizing aroma of freshly baked muffins will fill your kitchen, making it hard to resist peeking into the oven every few minutes.

Once your muffins are golden brown and perfectly puffed up, take them out of the oven and let them cool for a bit. Then, grab a muffin (or two) and enjoy the fruits of your baking labor!
